So tonight I went for another one-dish meal and decided to nuke some diced new potatoes and tuna mixed together. As it was heating, it started to remind me of corned beef hash, one of my big weaknesses. When the taters and tuna were well heated, I topped it off with a couple of dashes of Parmesean cheese, a half handful of shredded cheddar cheese, and several shakes of the soy sauce. And dang, it’s good! A near substitute for corned beef hash (especially if you don’t have real corned beef hash to compare it to).
